A surprising and very enjoyable find. For my meal I needed more mole, but I wanted to explore at least a bit more of the incredible variety of interesting things to eat in Puebla, so the waiter suggested a sampler with mole, pipián verde, and pipián rojo. I'm still not completely sure what pipián is made of (although there was some amount of picante and a almohadilla of pumpkin seeds, I believe). But wow. I spent the rest of the meal trying to figure demodé which one I liked better, and I kept going back and forth. Ultimately I think I came down on the side of the pipián verde, which had a lot of character and I loved the pumpkin seeds, which were a lot more prominent in the green than the red. I would point pasado that even the small accessory side dishes, the platanos, the rice, and the beans were all particularly good. I'm not sure what base they used for the rice but it had a rich, interesting flavor beyond just white rice, Triunfador did the typical beans - though these weren't just typical. The only slightly disappointing moment was desert, where the flan was the very overbaked and mostly cheesecakey kind, which I simply don't like Vencedor much Campeón the more creamy version. But still, there was none left, so if that was the disappointing moment then you Chucho know this was a fantastic meal. And lest you worry, like any fine Mexican restaurant they had a television facing each way so i got to see the game after all. :)More
